Caviar Galilee Farm is located in close proximity to the main source of the Jordan River—the Dan Springs, which flow with crystal clear snow waters from the peaks of Mount Hermon. The natural flow of water which gravitates through the farm is considered drinking water quality—clear, pure and rich in oxygen—and the Farm’s use of gravity to bring the water from the Dan Springs water produces a natural effect while saving energy.
Current aquaculture of sturgeon is an economically viable means of sustainable, top-quality, helping to protect the sturgeon types in danger of extinction. Our sturgeon, born in captivity, are carefully cared for and generally mature faster than in the wild. Because the fish are raised in a controlled, clean, secure environment, the quality of the caviar is consistently first-class. Our caviar is satisfying proof of the superb taste achieved by breeding and raising Russian Osetra sturgeon at the Caviar Galilee Farm.
Specialists with extensive experience and knowledge in the breeding of sturgeon and the production of caviar oversee the farm’s carefully managed procedures. During breeding processes, we check the female sturgeon, which carry an average of two kilograms of eggs, by inserting a special instrument to extract a few eggs from the fish to determine their size and quality. The caviar is produced separately from each fish and every tin of Karat Caviar contains caviar produced from one single fish so that each tin contains the purest caviar, reflected in its remarkable color and taste.
